BANANA MUFFINS



250gm plain flour
150gm castor sugar
1 cup mashed ripe banana
125gm margarine or butter
2 eggs
6 tbsp milk
21/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt

Method:

1. In a bowl,mix flour,baking powder,baking soda,salt,cinnamon and set aside.
2. In a separate bowl,cream margarine and sugar,add eggs and mix until smooth. Stir in milk and mashed banana and mix well.
3. Fold in flour mixture into the liquid ingredients until combined.
4. Fill greased muffin tins two-thirds of the way full. Bake in a preheated 180 deg c oven for 15 mints.
