BRINJAL AND VEGETARIAN PRAWN SALAD





BRINJAL AND VEGETARIAN PRAWN SALAD

400 gm long brinjal,remove skin and sliced,boil some water with salt when the water is boiling put the brinjal into it cook till ½ cooked. Strain and keep a side.

100 gm vegetarian prawn,sliced in to 2 and boil for 2 mints and strain.keep aside

100 gm carrot,remove skin and shredded

1 big tomato, sliced finely

1 big onion,sliced finely

2-3 green chilie,finely sliced,add in a few bird eye chilies if you like it hot.

¼ cup peanuts

¼ cup pounded peanuts

For the sauce

½ cup vegetarian mayonnaise

¼ cup chilie sauce

1 tbsp sugar

1 tbsp lime juice

Salt to taste

In bowl mix in all the Sauce ingredients. In a big bowl mix all the

ingredients together and serve at once with rice.

Note: instead of vegetarian prawn you can add in prawns. Boil the prawns

 with the skin then remove the skin and sliced into 2.
