VEGETARIAN CHICKEN CURRY 2

VEGETARIAN CHICKEN CURRY

In case if can't get vegetarian chicken you can replace it with tau foo. Cut the tau foo into small pieces and fried it before use.


250gm vegetarian chicken,

300gm potatoes,cut into cubes

150gm long beans,cut

150gm tomatoes,cut into wedges

2 tbsp meat curry powder

1 tsp chili powder

1 litre coconut milk

Salt and a pinch of sugar to taste

Grind to a paste

10 dry chilis remove seeds and soaked

5 stalk lemon grass,chopped

3cm lengkuas.chopped

5 shallots

4 garlic

2cm ginger

For tempering (A)

4 cardamons

4 cloves

4 star anisee

2 stick cinnamons

2 stalk kari leaves

3-4 tbsp oil,or more less


1. Heat the oil and add in A and fry until fragrant. Add in  the grind ingredients,curry powder and chili powder and  fry until the oil rise.

2. Add in the potatoes,tomatoes and the coconut milk let it cook over a low heat until the potatoes are cook. Add in the vegetarian chicken and long bean cook cook until done. Serve with rice.
