CHILI PADI CHICKEN




CHILI PADI CHICKEN


1 chicken,cut into pieces.

2 tbsp turmeric powder

Salt to taste

Mix the chicken with the salt and turmeric. and fry until cooked but make sure it is not hard.

Blend

8 shallots

5 garlic

2 stalk serai

1 inch ginger

1 inch fresh turmeric

1 inch lengkuas

12 chili padi,you can add more or less to your taste.

1/2 cup oil

1 cup thick coconut milk

2 tbsp thick tamarind juice,or to taste

11/2 tbsp sugar

1 cube chicken stock,if you like

1. Heat the oil and fry the blend ingredients until oil rise. Add in the coconut milk,sugar,tamarind juice,chicken stock if you use  cook until it is thick and oil rise. ( You can remove some oil if you think it is very Oliy)

2. Add the fried chicken and stir well. cooked until dry. Remove from the heat. Serve with rice
