KAFFIR LIME LEAVES EGG CURRY



KAFFIR LIME LEAVES EGG CURRY

10 eggs,boil,remove skin

3-4 potatoes,cut into pieces
( you can add long beans instead of potatoes )

1-2 asam gelugor,or to taste

2 tbsp meat curry powder

6-7 kaffir lime  leaves

1 cube chicken stock,if you like
( I didn't add )

1.litre coconut milk

1/4 cup oil

Salt and sugar to taste

Blend to a paste:

10 dry chilies,remove seeds and soaked

5 stalk lemon grass

3cm lengkuas

2 cm ginger

5 shallots

4 garlic

4-5 stalk of coriander leaves

1. Heat oil and add in the blend paste and curry powder and fry until the oil rise over a low heat.

2. Add in the potatoes,lime leaves, asam gelugor and the coconut milk. Stir well and let it cook over a low heat until the potatoes a re cooked.

3. Add in the sugar,salt,chicken stock if use and the eggs. Cook for a while until the oil rise.
