MOIST CHOCOLATE CAKE

 

180gm butter

360gm castor sugar

3 large eggs

 

Mix together

1 tsp instant coffee powder

1 tsp vanilla Essenes

1 cup water  or milk

 

Sieve together

240gm flour

75gm cocoa  powder

1 tsp baking powder

1 tsp bicarbonate of soda

1/2 salt

 

1. Beat the sugar and butter and add the eggs one at a time and beat well till the mixture is light and creamy.

2. Fold in the flour alternately with the coffee mixture till finish.

3. Pour in a greased and line 20cm cake tin and bake in a preheated oven 180c for 1 hour.

4. Cool cake in the tin for 10 mints before carefully running the tip of a knife all around the edge of the tin to loosen cake. Turn out onto a wire rack to cool. Cake taste better the next day
