FRIED BRINJAL

FRIED BRINJAL


450gm brinjal,cut into cubes

1 big tomato,chopped

3 cloves garlic,chopped

2cm ginger,chopped

1/2 tbsp chili powder

1/2 tsp turmeric powder

1 tsp coriander powder

1/3 cup water

Salt to taste

For tempering(A)

1 big onion,finely sliced

3-4 dried chili,broken into pieces

1 tsp mustard seeds

1 tsp ulutham parupu

2 stalk kari leafs

4-5 tbsp oil

1. Heat oil and add in A fry until fragrant and when the onion turn light brown add in the garlic and the ginger fry until the raw smell disappear.

2. Add in the tomatoand the powders stir fry until the oil rise, add in the brinjal,salt and water stir well and cover the pan,lower the heat and let it cook.

3. When the water dried up a bit stir fry until the brinjal is cook and dry. Remove from the heat and serve with rice.
