CHICKEN CURRY
1.2 kg, Chicken
4 medium size potatoes,remove skin
and cut into wedges
2 tspTurmeric powder
2 tsp Salt
Grind into paste:
20 Shallots,sliced*
20 Garlic,chopped*
1 small piece Ginger, chopped *
4 tbsp Coriander powder *
1 tsp Fennel seed powder *
2 tsp Pepper powder *
1 tsp Garam masala powder *
5 tsp chilie powder*
For tempering
1/3 cup oil
3 Cardamom
4 Cloves
4 small Cinnamon stick
2-3 stalk karileaves
4 medium size Onion, sliced
4 green Green chilli
4 medium sizeTomato, chopped
Clean and cut chicken into pieces.
Marinate chicken pieces with turmeric powder and salt. Set aside.
Grind shallots, ginger, and garlic. Add coriander powder, fennel seed powder, pepper powder, garam masala powder,and little water. Grind again. Set ground paste aside.
Heat oil in a pot or pan, Add cinnamon, cardamom, and cloves. When it starts to splutter, add curry leaves.
Saute onion by adding ½ tsp salt. Saute till onion is light brown in color. When onion is light brown in color, add ground paste. Saute for 5 minutes. If you feel masala is too dry, add more oil.cook till the oil rise.
Add tomato and green chillies. Saute till tomato is mushy. Add chicken pieces and potatoes.. Mix well so that masala is well coated on to chicken. Add 2 cup of water . Close the lid of of the pan cook
Cook for some more time so that gravy thickens. When gravy thickens, add curry leaves. Mix well and remove from the heat.
