KUIH LAPIS
2 cup rice flour
1 cup wheat flour
1 cup tapioca flour
1 cup of sugar
4-1/2 cups coconut milk
1 teaspoon red coloring
1 tsp rose essence
Combine all ingredients except coloring and red colour
Strain and divide into 2
1 part add red coloring
Heat up the steamer.. Use a plastic baking sheet or brush a little oil..
Pour 1 & 1/2 cups of the white mixture into the pan and steam for 5 minutes
Then 1& 1/3 cups of the mixture is red..steam for another 5 minutes
Make until the mixture is gone...
The final mixture can be steamed for 20 to 30 minutes
When you open the lid..steam for another 5 minutes to let the water on the top dry..
Cool down
Cut and serve
NOTE: I made this kuih using small moulds. first add 1 tbsp of the red batter steam then add ½ tbsp of the white batter do this till the end. cool down the remove the kuih form the mould.
