COCONUT
RICE
This is my own version of the coconut rice.
1 cup
basmathi rice,soaked for 1/2 hour
2 cup thick
coconut milk
50 gm
shallot, pounded
20 gm
ginger, pounded
½ tsp
fenugreek seeds
A few curry
leaves
1 tsp salt
1 tbsp sugar
Mix all the
ingredients in a rice cooker and cook till the rice is well cooked. Keep a
side.
¼ cup ground
nut,fry till cook and keep a side
¾ cup grated
coconut
2 dry
chilies, broken*
1 tsp
mustard seeds*
1 tsp
ulutham parupu*
1 tsp
kadalai paruppu*
¼ tsp
asafetida powder
1 stalk kari
leaves*
2 tbsp
coconut oil

Heat the coconut oil and add in the *
ingredients and fry till fragrant.

Add
in the grated coconut and fry till well mix and fragrant.
3.
Add
in the rice and mix well add in the peanut and mix well.serve with potatoes
masala.
