BOMBAY HALWA
1 cup cornflour
3 cup sugar
4 cup water
4-6 tbsp ghee
1 tsp tartaric powder or lime juice
1/4 cup cashew nuts, chopped
1 tsp cardamom powder
Food colour of your choice
1. Put cornflour in a bowl. And add 11/2 cup water and mix well.keep aside
2. Add about 1 tbsp ghee in a pan and roast the nut. Keep a side. In the same pan add in the sugar and 21/2 cup water bring it to boil.
3. When the sugar syrup is boiling low the heat. Add in the cornflour mixure little by little stirring continuously to avoid lumps.
4. After sometime you will observe that the mixure will start thickening and glossy. Add ghee and mix well. Keep stirring. Add ghee little by little while stirring. Add the colour and lime juice .
5. Once the mixture starts leaving the surface and becomes a single lumps. It is done add cashew nuts and cardamom powder. Mix well and pour into a tray. let cool before cutting.
Note; Don’t avoid the lime juice. i use a 250ml cup in all my recipes.
