KAM HEONG CHICKEN

 Ingredients: 

Serves  5 - 6 pax 


Ingredients for marinated chicken

--------

1kg of chicken - cut into bite sizes

3 tablespoons of light soy sauce

2 tablespoons of oyster sauce

1 tablespoon of meat curry powder

1 teaspoon of sugar

1 egg

6 tablespoons of cornflour 


Other ingredients

-----------

20g of chopped dried shrimp (soak in 1/2 cup of water - keep water for later use)

1 bulb of chopped garlic

5 pieces of chopped shallots

5 pieces of chopped dried red chilli (rehydrated & deseeded)

2 stalks of lemongrass - use only the white stem

1 handful of curry leaves

1/2 cup of dried shrimp soaking liquid (as above - see dried shrimp)

3 tablespoons of oyster sauce

2 teaspoons of sugar
