BRINJAL
AND VEGETARIAN PRAWN SALAD
400 gm long
brinjal,remove skin and sliced,boil some water with salt when the water is
boiling put the brinjal into it cook till ½ cooked. Strain and keep a side.
100 gm
vegetarian prawn,sliced in to 2 and boil for 2 mints and strain.keep aside
100 gm
carrot,remove skin and shredded
1 big
tomato, sliced finely
1 big
onion,sliced finely
2-3 green
chilie,finely sliced,add in a few bird eye chilies if you like it hot.
¼ cup
peanuts
¼ cup
pounded peanuts
For the
sauce
½ cup
vegetarian mayonnaise
¼ cup chilie
sauce
1 tbsp sugar
1 tbsp lime
juice
Salt to
taste
In bowl mix in all the Sauce ingredients. In a big bowl mix
all the
ingredients together and serve at once with rice.
Note: instead of vegetarian prawn you can add in prawns. Boil
the prawns
with the skin then remove the skin and sliced into 2.
