FRIED LONG BRINJAL
450gm long brinjal,cut into cubes
2 tomatoes,chopped
1/2 tbsp chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
2 garlic,chopped finely
Salt to taste
For tempering(A)
1 big onion,sliced finely
4 dried chili,broken into pieces
1 tsp mustard seeds
1 tsp ulutham parupu
2 stalk karileaves
4-5 tbsp oil
1. Heat the oil and add in A and fry until fragrant.When the onion turn light brown add in the garlic and ginger fry until the raw smell disappear.
2. Add in the tomatoes and the powders with a little mix well. Add in the brinjals and salt stir well.
3. And cover the pan and cook over a low heat stirring now then till the brinjal is cooked. Serve with rice.
